Ham & Cheese Cruffin



  • 115g diced leg ham

  • 1 small carrot

  • ½ a zucchini

  • 1 croissant

  • 2 eggs

  • 12g milled flax seed

  • 75ml milk

  • 100g self raising flour

  • 3g milled chia seed

  • 100g grated cheese



  1. Gather together all the ingredients and set the oven to 180c.

  2. Make a well in the flour and crack the eggs into it.

  3. Add the chia, flax and milk to the bowl.

  4.  Mix the flour, egg, milk and seeds together with a rubber spatula.

  5.  Grate the zucchini and carrot on a the big side of a cheese grater. Be very careful not to grate your fingers.

  6.  Add the grated vegetables, cheese and diced ham and chopped croissant to the bowl and mix well.

  7. A little salt and pepper will make the muffins taste great.

  8.  Spoon the mixture into some paper cases and then put them into the oven on trays.  Cook for 25 minutes.

  9.  When the timer goes off take the muffins out of the oven. Use a tea towel or oven gloves and remember the tray will be hot.

  10.  When the timer goes off take them out and let them rest for 6 minutes on the bench before eating them.
